Hiking in Puerto Vallarta vary in intensity, but the city of Puerto Vallarta itself is very walkable.
The best known, relatively short, hike is from Boca de Tomatlan to Las Animas beach. It’s can be done in a couple of hours and you can see a map here.

When you arrive at Boca de Tomatlan, which is the end of the line, walk down the hill to the town. At the town walk further to the river that feeds the beach, turn left, upstream, till you get to the bridge to cross. At the other side turn right and continue, past some private properties all the way to the start of the trail.
There may be many other hikers walking the trail with you. Be sure to take some water as it can get hot and humid. On the way you will also find Las Casitas Maraika restaurant on a beach with great food and drinks
Las Animas means “The Souls” and is a very popular destination with restaurants and bars on the beach. Reached by the ocean in a Panga from Puerto Vallarta
But for 10 pesos you can take a bus from town to Boc de Tomatlan and then hike the trail.
The trail follows the coastline and is well signposted with some safety wooden railings here and there. On the way you’ll reach Colomitos Beach, a small secuded beach which is now become a popular one reach via water. There’s a restaurant there now, where you can buy coconut water.
Hiking in Puerto Vallarta as m0re adventuresome trails including continuing south to Quimixto, but you’ll need a guid for that.
